DAY 41 (COUNTDOWN TIL CHRISTMAS)

MINT CHOCOLATE CHIP COOKIES
(OR I MAY CALL THEM GRINCH COOKIES BECAUSE THEY ARE GREEN :))

1 POUCH (1 LB 1.5 OZ) BETTY CROCKER SUGAR COOKIE MIX
(OR I BELIEVE YOU COULD USE ANY COOKIE RECIPE)
1/2 CUP BUTTER OR MARGARINE (SOFTENED)
1/4 TSP MINT EXTRACT
8 DROPS GREEN FOOD COLORING
1 EGG
1 CUP CREME DE MENTHE BAKING CHIPS (I USED ANDY'S MINTS THAT I CHOPPED UP BECAUSE I COULDN'T FIND THE CHIPS)
1 CUP CHOCOLATE CHIPS

HEAT OVEN TO 350. IN LARGE BOWL, STIR COOKIE MIX, BUTTER, EXTRACT, FOOD COLORING AND EGG UNTIL SOFT DOUGH FORMS. STIR IN BAKING CHIPS.
USING SMALL COOKIE SCOOP OR TEASPOON, DROP DOUGH 2 INCHES APART ON UNGREASED COOKIE SHEET.
BAKE 8-10 MINUTES OR UNTIL SET. SERVE WARM OR COOL AND ENJOY.

THESE ARE VERY GOOD - I DIDN'T THINK THEY WOULD BE AS GOOD AS THEY ARE, BUT THEY ARE ABSOLUTELY DELICIOUS! TASTE JUST LIKE MINT CHOCOLATE CHIP ICE CREAM!

Here a great recipe I just tried today.

PUMPKIN DROP COOKIES FOR THANKSGIVING

2 CUPS FLOUR
1 CUP ROLLED OATS
1 TSP CINNAMON
1 CUP BUTTER OR MARGARINE SOFTENED
1 CUP BROWN SUGAR
1 CUP SUGAR
1 EGG
1 TSP VANILLA
1 CUP CANNED PUMPKIN
1 CUP CHOCOLATE CHIPS

IN A BOWL, COMBINE FLOUR, OATS AND CINNAMON. SET ASIDE. IN A LARGE MIXING BOWL, CREAM BUTTER, WHITE AND BROWN SUGARS UNTIL LIGHT AND FLUFFY. aDD EGG AND VANILLA, MIXING WELL. ADD FLOUR MIXTURE AND PUMPKIN ALTERNATELY, MIXING WELL AFTER EACH ADDITION. STIR IN CHOCOLATE CHIPS. DROP BY TABLESPOONS ONTO GREASED COOKIE SHEET. BAKE AT 350 FOR 15-20 MINUTES OR UNTIL FIRM AND LIGHTLY BROWNED.

DAY 43 (COUNTDOWN TILL CHRISTMAS)

You can't go wrong with a No-Bake Cookie - they are easy and quick to make when you are in a hurry!

NO-BAKES

1/2 cup milk 3 TBSP cocoa
2 cups sugar 3 cups oatmeal
1/2 cup peanut butter 1 tsp vanilla
1/2 cup butter

Combine milk, sugar, cocoa, and butter. Stir and bring to a boil. Boil for 1 minute till all ingredients are dissolved. Remove from heat and add peanut butter and vanilla, then add oatmeal. Mix well and drop on wax paper. Cool and Enjoy!

DAY 44 (COUNTDOWN TILL CHRISTMAS)

SNICKERDOODLES

1 CUP SHORTENING OR MARGARINE
1 1/2 CUPS SUGAR
2 EGGS
MIX TOGETHER THE ABOVE INGREDIENTS
ADD:
2 3/4 CUPS FLOUR
1 TSP SODA
1 TSP VANILLA
2 TSP CREAM OF TARTAR

MIX TOGETHER. FORM INTO BALLS AND ROLL INTO MIXTURE OF 1/2 CUP SUGAR AND 4 TSP CINNAMON. COOK AT 350 FOR 12 MINUTES. AT CHRISTMAS TIME I LIKE TO ROLL THESE IN THE COLORED RED OR GREEN SUGAR SPRINKLES - JUST USE 1/2 CUP OF COLORED SUGAR WITH THE CINNAMON INSTEAD OF WHITE SUGAR OR MIX 1/2 AND 1/2. IT MAKES THEM PRETTY AND FESTIVE! :D

Day 45

Okay, I'm a little behind on my Countdown to Christmas - I will try to catch up today. Here a recipe I tried the other day. I have made these before as brownies (recipe from my mom) but I decided to try them as cookies and see what happened. They turned out wonderful.

BROWNIE SURPRISE COOKIES

1 Brownie Mix
1 egg
1/4 cup oil
1/8- 1/4 cup water
1 large Symphony Bar or other candy

Mix brownie mix, egg, oil and water until you get a thick soft dough. Form small balls of dough, mold dough around 1/2 a square of symphony bar. Place on Cookie Sheet and Bake for 8-10 minutes at 350. You could probably use any kind of candy, but the symphony bars are delicious! :D

DAY 46

HOMEMADE OREOS

COOKIE: 2 BOXES DEVILS FOOD CAKE MIX
4 EGGS
1 CUP SHORTENING OR MARGARINE

MIX TOGETHER. ROLL INTO SMALL BALLS. PLACE ON COOKIE SHEET. BAKE AT 375 FOR 7-8 MINUTES. IMMEDIATELY AFTER TAKING THEM OUT OF THE OVEN DROP COOKIES UPSIDE DOWN ON COOKIE SHEET (FLIP OVER) TO MAKE BOTH SIDES FLAT. LET COOL.

FILLING: 8 OZ SOFTENED CREAM CHEESE
1/2 CUP MARGARINE
1 TSP VANILLA
3-4 CUPS OF POWDERED SUGAR

MIX TOGETHER, THEN SPREAD ON COOKIES AND LAYER COOKIE, FILLING COOKIE, TO MAKE AN OREO.
YUM!

Day 47

KISS COOKIES

1 C Peanut Butter 1/2 cup sugar
1/2 cup butter 2 eggs
2 tsp vanilla 2 1/2 - 3 1/2 cups flour (till dough is
1 cup honey (soft)
Bag of hershey kisses 1 tsp baking soda

CREAM TOGETHER PEANUT BUTTER, BUTTER, AND VANILLA. GRADUALLY ADD SUGAR AND HONEY. ADD EGGS. BEAT WELL UNTIL LIGHT AND FLUFFLY. ADD FLOUR AND SODA. BEAT UNTIL WELL-BLENDED AND DOUGH IS SOFT. ROLL IN TO BALLS AND PLACE ON GREASED COOKIE SHEET. PRESS UNWRAPPED HERSHEY KISS ON TOP OF BALL OF DOUGH. YUM! COOK AT 350 FOR 8-10 MINUTES.

HOT CHOCOLATE COOKIES



2 CUBES ROOM TEMPERATURE BUTTER

1 CUP SUGAR

2/3 CUP BROWN SUGAR

2 EGGS

1 TSP VANILLA

3 1/4 CUPS FLOUR

4 PACKAGES HOT CHOCOLATE MIX (OR 8 TBSP)

1 TSP SALT

1 1/4 TSP BAKING SODA

1 CUP EACH WHITE, MILK, AND SEMI-SWEET CHOCOLATE CHIPS



CREAM TOGETHER BOTH SUGARS AND BUTTER UNTIL LIGHT AND FLUFFY. IN ANOTHER BOWL, WHISK TOGETHER THE DRY INGREDIENTS.

MIX EGGS, AND VANILLA IN SUGAR MIXTURE. SLOWLY, ADD THE DRY INGREDIENTS. ADD THE CHOCOLATE CHIPS TO THE COOKIE DOUGH. DROP ONTO GREASED COOKIE SHEET OR PARCHMENT PAPER LINED COOKIE SHEET. BAKE AT 350 FOR 8-10 MINUTES.. DELISH! THESE ARE BY FAR MY FAVORITE COOKIES NOW!

Bisquick Baking Mix (made from scratch)

So, while searching for a good biscuit recipe for dumplings, I came across this recipe for homemade Bisquick mix. It worked really well for the Dumplings. I'm anxious to try it in other recipes. Here it is:

8 cups of flour
1 1/4 cups of nonfat dry milk powder
1/4 cup of baking powder
1 Tbsp salt
2 cups solid vegetable shortening (I used margarine)

In a large bowl, combine flour, milk, baking powder, and salt. With a pastry blender or two knives, cut in shortening until the mixture looks like coarse cornmeal and the shortening is evenly distributed. Store in tightly closed covered container in a dark, cool place. Use in place of "Bisquick" in any recipe.

SOUR CREAM RASPBERRY MUFFINS


These muffins are amazing! The recipe called for Blueberries - which I have always used, but I didn't have any, but I did have frozen raspberries, so I thought I would try it and see what happened. They were wonderful! Here's the recipe.


2 cups bisuit/baking mix

3/4 cup plus 2 tablespoons sugar, divided

2 eggs

1 cup sour cream

1 cup fresh or frozen (drained) raspberries (or blueberries)


1. In a large bowl, combine the biscuit mix and 3/4 cup sugar. In a small bowl, combine eggs and sour cream; stir into the dry ingredients just until combined. Fold in raspberries (or blueberries)

2. Fill greased muffin cups 3/4 of the way full. Sprinkle with remaining sugar. Bake at 375 for 20-25 minutes or until a toothpick comes out clean. Cool and enjoy!

Waffle Cookies


These are a super quick easy cookie. They probably take 10 minutes from start to finish. They are a family favorite at our house.

Waffle Cookies

1/2 cup butter
2 eggs
3/4 cup sugar
1 tsp vanilla
Mix above ingredients together. Add 1/4 cup cocoa and 1 cup flour.
Put spoonfuls of dough on hot waffle iron - cook 1 - 1 1/2 minutes. Frost with white frosting.

DOUBLE DECKER COOKIE BROWNIE BARS WITH M&MS

3/4 CUP BUTTER, SOFTENED
3/4 CUP WHITE SUGAR
3/4 CUP BROWN SUGAR
3 LARGE EGG WHITES
1 LARGE EGG
1 TEASPOON VANILLA
2 1/2 CUPS FLOUR
2 1/2 TEASPOONS BAKING POWDER
1/2 TEASPOON SALT
1/3 CUP COCOA POWDER
1/2 TEASPOON SALT
1/3 CUP COCOA POWDER
1 TABLESPOON BUTTER, MELTED
1 CUP SEMI-SWEET CHOCOLATE CHIPS
1/2 CUP M&MS (I USED HALLOWEEN M&MS :) )

PREHEAT OVEN TO 375 F. LIGHTLY GREASE A 13 X 9 X 2 INCH BAKING PAN. SET ASIDE. CREAM BUTTER AND SUGARS UNTIL LIGHT AND FLUFFY. BEAT IN VANILLA, EGG WHITES AND WHOLE EGG. SITR IN 2 1/4 CUPS FLOUR MIXED WITH BAKING POWDER AND SALT; BLEND WELL. ADD SEMI-SWEET CHOCOLATE CHIPS (I USED MINI ONES THAT I GOT AT WINCO) DIVIDE BATTER IN HALF. BLEND TOGETHER COCOA POWDER AND MELTED BETTER; STIR INTO HALF OF THE DOUGH. SPREAD EVENLY INTO PREPARED BAKING PAN. TO THE REMAINING DOUGH, STIR IN 1/4 CUP OF FLOUR AND 1/2 CUP M&MS. SPREAD EVENLY OVER COCOA DOUGH IN PAN. BAKE
20 - 25 MINUTES OR UNTIL EDGES START TO PULL AWAY FROM SIDES OF PAN. CUT INTO BARS. STORE IN TIGHTLY-COVERED CONTAINER.

Kookies and Krafts

Kiara and I are setting up a new blog called "Kookies and Krafts" and we will be uploading recipes and crafts for everyone to see. We will put directions on how to make things along with pictures. Hopefully, we will be able to keep it updated a few times a week. We will have all different kinds of recipes - not just cookies.
